I think the texture of these mimics the chewiness of American cookies. Most Japanese cookies have a crunchy taste, but these are chewy.
But as a Japanese, this chewiness reminds me more of Japanese wagashi than American ones. It is very similar to the texture of anko (red bean paste)?🤔
